One of the most annoying things for me when I’m trying to eat healthier or stick to a diet is the absence of really healthy desserts in coffee shops and stores. “Really healthy” means for me low in sugar. Some of you might think that when you are trying to eat clean and lose weight you are not supposed to have a dessert at all. Depends what kind of dessert and when you eat it.
These healthy breakfast muffins (that are almost like cupcakes) are perfect for those who are on a strict low-carb diet and trying to lose weight. They don’t have any artificial sweeteners, no sugar, gluten-free, and also delicious!
Eating clean, I tried all types of diets in my life. Recently, my husband and I switched to the keto diet and we love how much energy we have all day long and how more productive we feel without sugar in our life. But sometimes, we feel like we need a treat, whether to eat something with a cup of matcha in the morning on the weekend or before a workout in the afternoon. So, I had to come up with a simple healthy recipe that we could both eat while on keto.
So, here it is: my favorite dessert recipe - healthy carrot muffins.
The texture of these muffins is a bit thicker than in regular flour muffins. The more carrots you add, the sweeter the dessert. I use only 3 large carrots and that’s perfect for us.
Keto-friendly Carrot Muffins
Serves 12
Prep Time: 15 min
Cook Time: 20 min (depends on your oven, so might take a bit longer)
INGREDIENTS:
MUFFIN BASE:
- 1 cup of almond flour
- 3/4 cup of walnut pieces
- 3 large grated carrots
- 1/4 cup of almond milk
- 1 tsp of cinnamon
- 1 tsp of nutmeg
- pinch of sea salt
- 100 g of melted unsalted butter
- 2 eggs
- 1 drop of vanilla extract
- add Stevia if needed (optional)
CHOCOLATE TOPPING:
- 50 gr of melted unsalted butter
- 2 tsp of unsweetened cocoa powder
- 1 drop of vanilla extract
- add Stevia (1 small pack) if needed
Instructions
- Preheat your oven to 350F (180C).
- Grate carrots in a food processor.
- Mix liquid ingredients together in a bowl: almond milk, 2 eggs, vanilla extract, and melted butter. Whisk well until consistent.
- Mix dry ingredients in a separate mixing bowl: almond flour, walnuts, grated carrots. Add salt, cinnamon, and nutmeg.
- Add liquid ingredients to the mixing bowl with dry ingredients: stir well until the batter is smooth.
- Divide the batter into 12 muffin cups and bake in the oven for 20 min.
- Prepare the healthy chocolate: add 2 tsp of cocoa powder in 50 gr of unsalted melted butter, add vanilla extract (and Stevia if needed - optional). Mix well until smooth.
- Once the muffins are baked (you can check if the toothpick comes out dry), let them cool down for 10 min on the table. Then spread the chocolate as a topping.
